Roasted Brussels Sprouts with Apples

Ingredients
  

  • 1.5 lb brussels sprouts halved
  • 2 apples cut into chunks
  • 3 tbsp olive oil
  • 2 tbsp balsamic glaze
  • 1 tbsp maple syrup
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped pecans

Method
 

  1. Heat oven to 425F and line a baking sheet.
  2. Toss the Brussels sprouts and apples with olive oil, salt, and pepper.
  3. Spread cut-side down in a single layer on the sheet.
  4. Roast 25 to 30 minutes until the sprouts are crispy and caramelized.
  5. Drizzle with balsamic glaze and maple syrup and toss.
  6. Scatter the pecans over the top and serve warm.

Notes

Crowding the pan steams the sprouts, so give them room.

Ingredients
  

  • 8 apples peeled and chopped
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1.5 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1 tbsp lemon juice
  • 1 pinch salt

Method
 

  1. Add the apples, maple syrup, brown sugar, cinnamon, nutmeg, cloves, lemon juice, and salt to a slow cooker.
  2. Cover and cook on low 8 to 10 hours, stirring occasionally, until deep brown.
  3. Blend until completely smooth with an immersion blender.
  4. If it's thin, cook uncovered another hour to thicken.
  5. Cool and spoon into jars.
  6. Store in the fridge and spread on everything.

Notes

Use a mix of sweet and tart apples for the richest flavor.
