Ingredients
  

  • 1.5 cups almonds
  • 1 cup Medjool dates pitted
  • 2 cups cashews soaked
  • 0.5 cup maple syrup
  • 0.33 cup coconut oil melted
  • 0.25 cup lemon juice
  • 0.5 cup vegan salted caramel
  • 0.5 tsp flaky sea salt

Method
 

  1. Blend the almonds and dates into a crust and press into a pan.
  2. Blend the cashews, maple syrup, coconut oil, and lemon juice until smooth.
  3. Pour the filling over the crust and freeze 4 hours until set.
  4. Drizzle the salted caramel generously over the top.
  5. Sprinkle with flaky sea salt.
  6. Thaw 15 minutes before slicing and serving.

Notes

Make a quick caramel from coconut cream, maple, and a pinch of salt if you can't find vegan caramel.
