Ingredients
  

  • 2 cups graham cracker crumbs
  • 0.5 cup butter melted
  • 16 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 cup crushed pineapple drained
  • 1 cup whipped topping thawed
  • 3 tbsp fresh mint finely chopped

Method
 

  1. Mix the graham crumbs and melted butter, press into a pie dish, and chill.
  2. Beat the cream cheese and powdered sugar until smooth, then fold in the whipped topping.
  3. Fold in the pineapple and most of the chopped mint, then spread over the crust.
  4. Refrigerate at least 4 hours until firm, then garnish with the remaining mint before slicing.

Traditional Pineapple Upside-Down Cheesecake

Ingredients
  

  • 0.5 cup butter melted
  • 0.75 cup brown sugar
  • 7 pineapple rings
  • 7 maraschino cherries
  • 24 oz cream cheese softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract

Method
 

  1. Pour the melted butter and brown sugar into the bottom of a parchment-lined springform pan and arrange the pineapple rings with a cherry in each center.
  2. Beat the cream cheese and sugar until smooth, add the eggs one at a time, then beat in the vanilla.
  3. Pour the batter gently over the pineapple and bake at 325 degrees F for 60-65 minutes until set.
  4. Cool completely, then refrigerate at least 4 hours.
  5. Invert the cheesecake onto a plate so the caramelized pineapple and cherries are on top before slicing.

Notes

Run a knife around the edge before flipping so it releases cleanly.
