Ingredients
  

  • 1.5 cups graham cracker crumbs
  • 0.5 cup butter melted
  • 24 oz cream cheese softened
  • 1 cup sugar
  • 3 eggs
  • 1 cup crushed pineapple drained
  • 1 tbsp orange zest
  • 1 tbsp lime zest
  • 1/2 cup prepared citrus glaze for finishing

Method
 

  1. Mix graham crumbs and melted butter; press into springform pan and chill.
  2. Beat cream cheese and sugar smooth; add eggs individually.
  3. Fold in pineapple, orange zest, and lime zest; pour over crust.
  4. Bake at 325 degrees F 50-55 minutes until just set.
  5. Cool completely; refrigerate at least 4 hours, then brush with citrus glaze before serving.
