There are some amazing vanilla extract products out there, but if you want to make this for a special occasion, I recommend using a vanilla bean. It gives such a deep vanilla flavor.

I like to make this sort of recipe when I'm craving just a good cheesecake, nothing fancy. I just want that filling, that familiar, creamy, smooth texture with the crunchy beast base. I enjoy simple flavors, but it's also nice to have desserts that are a combination of flavors; it's a treat for your taste buds. Whenever I think of fall flavors, if I were to sum it up and be working for something that is warm, slightly spiced, earthy, and sweet, it's the ideal combination for when the weather starts to turn cold.

  1. Press the graham crumbs and butter into a mini muffin tin.
  2. Beat the cream cheese, sugar, and eggs until smooth and spoon over the crusts.
  3. Bake at 325F for 16 to 18 minutes until set.
  4. Cool, then chill at least 2 hours.
  5. Top each with spiced apples and a sprinkle of cranberries and toasted pecans.
