Ingredients
  

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 2 tsp ground cinnamon
  • 0.5 tsp salt
  • 1.75 cups milk
  • 2 large eggs
  • 0.33 cup butter melted
  • 1 tsp vanilla extract

Method
 

  1. Whisk the flour, sugar, baking powder, cinnamon, and salt together.
  2. In another bowl, whisk the milk, eggs, melted butter, and vanilla.
  3. Pour the wet into the dry and stir just until combined.
  4. Heat and grease a waffle iron.
  5. Pour batter into the iron and cook until golden and crisp.
  6. Serve warm with a dusting of cinnamon sugar and maple syrup.

Notes

Keep finished waffles warm in a 200F oven while you cook the rest.

Chocolate Chip Snickerdoodles

Ingredients
  

  • 2.75 cups all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1.5 cups chocolate chips
  • 2 tbsp granulated sugar for rolling
  • 2 tsp ground cinnamon for rolling

Method
 

  1. Whisk the flour, cream of tartar, baking soda, and salt together.
  2. Cream the butter and sugar, then beat in the eggs and vanilla.
  3. Mix in the dry ingredients, then fold in the chocolate chips.
  4. Chill the dough 15 minutes and stir the rolling sugar and cinnamon together.
  5. Roll the dough into balls, coat in the cinnamon sugar, and space on lined sheets.
  6. Bake at 375F for 10 to 11 minutes until edges set but centers stay soft.
