Snickerdoodle French Toast

Thick custard-soaked bread that is griddled to a golden perfection and finished with a delicious cinnamon sugar crust.

Ingredients
  

  • 8 slices thick bread
  • 4 large eggs
  • 1 cup milk
  • 2 tsp ground cinnamon
  • 2 tsp vanilla extract
  • 2 tbsp butter for the pan
  • 3 tbsp granulated sugar for coating
  • 1.5 tsp ground cinnamon for coating

Method
 

  1. Whisk the eggs, milk, cinnamon, and vanilla in a shallow dish.
  2. Stir the coating sugar and cinnamon together on a plate.
  3. Soak each bread slice in the custard for a few seconds per side.
  4. Melt butter on a griddle over medium heat and cook the bread until golden on both sides.
  5. While still warm, press each slice into the cinnamon-sugar coating.
  6. Serve right away with maple syrup or a pat of butter.

Notes

Slightly stale bread soaks up the custard best.
