Chewy Snickerdoodle Bars

Bars with a thick and gooey texture and blondie-style cookie appearance that have cinnamon-sugar swirls are cut into squares.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp cream of tartar
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter melted
  • 1.25 cups brown sugar packed
  • 1 large egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 2 tbsp granulated sugar for topping
  • 1 tsp ground cinnamon for topping

Method
 

  1. Line an 8x8 pan with parchment and heat the oven to 350F.
  2. Whisk the flour, cream of tartar, baking soda, and salt in a bowl.
  3. Stir the melted butter and brown sugar together, then beat in the egg, yolk, and vanilla.
  4. Fold in the dry ingredients until just combined, then press the thick batter into the pan.
  5. Mix the topping sugar and cinnamon and sprinkle evenly over the top.
  6. Bake 23 to 25 minutes until the edges are golden and the center is just set, then cool before cutting.

Notes

Underbake slightly for fudgy centers.
