Snickerdoodle Cookie Dough Bites

Cinnamon cookie dough that's been heat treated, rolled into balls, and covered in cinnamon sugar!

Ingredients
  

  • 1.25 cups all-purpose flour heat-treated
  • 0.5 cup unsalted butter softened
  • 0.5 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 1 tsp ground cinnamon
  • 2 tbsp granulated sugar for rolling
  • 1 tsp ground cinnamon for rolling

Method
 

  1. Microwave the flour in 30-second bursts to 165F to make it safe to eat raw, then cool.
  2. Cream the butter with both sugars until smooth and fluffy.
  3. Beat in the milk, vanilla, salt, and cinnamon.
  4. Stir in the cooled flour until a soft dough comes together.
  5. Roll the dough into small balls and toss each in the cinnamon-sugar coating.
  6. Chill the bites for 15 minutes to firm up before serving.

Notes

Store in the fridge for up to a week, if they last that long.
