Gingerbread Snickerdoodles

Ginger and clove cookies are spiced with molasses and rolled in cinnamon sugar.

Ingredients
  

  • 2.75 cups all-purpose flour
  • 1 tsp cream of tartar
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 1.25 cups brown sugar packed
  • 0.25 cup molasses
  • 1 large egg
  • 3 tbsp granulated sugar for rolling
  • 1 tsp ground cinnamon for rolling

Method
 

  1. Whisk the flour, cream of tartar, baking soda, spices, and salt together.
  2. Cream the butter and brown sugar, then beat in the molasses and egg.
  3. Mix in the dry ingredients until a soft dough forms, then chill 20 minutes.
  4. Roll the dough into balls and coat in the cinnamon-sugar mixture.
  5. Space on lined baking sheets and bake at 350F for 9 to 10 minutes.
  6. Let them cool on the pan a few minutes so the spiced centers stay soft.

Notes

Great with a mug of hot cocoa on a cold night.
