Spicy Jalapeño Hummus

Ingredients
  

  • 1 can chickpeas drained
  • 2 jalapeños roasted
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 2 cloves garlic
  • 3 tbsp olive oil
  • 1/2 tsp cumin
  • 1 pinch salt

Method
 

  1. Roast the jalapeños under the broiler until charred, then peel.
  2. Add the chickpeas, jalapeños, tahini, lemon juice, garlic, and cumin to a food processor.
  3. Blend while drizzling in the olive oil until smooth.
  4. Add a splash of water if needed for a creamier texture.
  5. Season with salt, swirl into a bowl, and finish with a drizzle of olive oil.

Notes

Roasting the jalapeños first adds a deep, smoky flavor.

  • 3 cups cooked macaroni and cheese chilled
  • 2 jalapeños minced
  • 1 egg beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup flour
  • 1 tbsp olive oil

Method
 

  1. Stir the minced jalapeños into the chilled mac and cheese.
  2. Roll the mixture into small balls and freeze 15 minutes to firm up.
  3. Coat each ball in flour, then egg, then panko.
  4. Arrange on an oiled sheet pan and drizzle with olive oil.
  5. Bake at 425F for 18 to 20 minutes, turning once, until golden and crisp.
