Jalapeño Beef Empanadas

Golden baked empanadas filled with ground beef and jalapeños.

Ingredients
  

  • 1 lb ground beef
  • 2 jalapeños diced
  • 1/2 cup diced onion
  • 1/2 cup shredded cheddar
  • 1 tsp cumin
  • 12 empanada wrappers
  • 1 egg beaten

Method
 

  1. Brown the ground beef with the onion, jalapeños, and cumin, then drain.
  2. Stir in the cheddar and let the filling cool slightly.
  3. Spoon filling onto each wrapper, fold over, and crimp the edges with a fork.
  4. Brush the tops with beaten egg and arrange on a lined sheet pan.
  5. Bake at 400F for 18 to 22 minutes until golden and crisp.

Notes

Seal the edges well so the cheesy filling stays tucked inside.
