Jalapeño Mac and Cheese Bites

Folded with jalapenos and Mac and cheese, the bite-sized balls are breaded and baked until they’re crispy!

Servings: 20 bites

Ingredients
  

  • 3 cups cooked macaroni and cheese chilled
  • 2 jalapeños minced
  • 1 egg beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup flour
  • 1 tbsp olive oil

Method
 

  1. Stir the minced jalapeños into the chilled mac and cheese.
  2. Roll the mixture into small balls and freeze 15 minutes to firm up.
  3. Coat each ball in flour, then egg, then panko.
  4. Arrange on an oiled sheet pan and drizzle with olive oil.
  5. Bake at 425F for 18 to 20 minutes, turning once, until golden and crisp.

Notes

Chilling the mac and cheese first keeps the bites from falling apart.
