Tuscan White Bean Soup

Creamy white beans, shredded kale, and tomatoes simmered together in a rich herbed broth.

Ingredients
  

  • 3 cans cannellini beans drained
  • 1 can diced tomatoes 14 oz
  • 1 onion diced
  • 4 cloves garlic minced
  • 6 cups vegetable broth
  • 3 cups chopped kale

Method
 

  1. Add the beans, tomatoes, onion, garlic, and broth to the crockpot.
  2. Season with salt, pepper, and a teaspoon of dried rosemary.
  3. Cover and cook on low 5 hours.
  4. Mash some of the beans against the side to thicken the broth.
  5. Stir in the kale and cook 30 minutes more until wilted.
  6. Adjust seasoning and serve with a drizzle of olive oil.
