Servings: 6-8 depending on how many pounds you get (recipe calls for 2-3 lbs). But if you’re feeding littles like I am, then you get even more servings!

Ingredients

2-3 lbsbeef chuck roast
1 tbspsalt
1 tbspchili powder
1 tbsponion powder
1 tbspgarlic powder
1 tsppaprika
1 tspcumin
1 tbspoil
1 tbspminced garlic
1 cupsalsa (I used Pace Picante mild)

Instructions

  • In a small bowl, mix all the dried seasonings.
  • Put the meat in the slow cooker. Rub all over with oil, then rub seasonings all over on both sides. Top with minced garlic and salsa.
  • Close the lid and cook on low for 7-8 hours. Shred into the liquid.
  • Serve with your favorite Mexican dishes! Tacos, burritos, quesadillas, as a bowl, over nachos, etc. The options are endless.
  • Leftovers freeze really well!

Why Budget Carne Asada

This is called “budget” carne asada because you typically use a more expensive cut of beef when making this.

The pot roast allows you to make enough for the family or a large crowd, and the leftovers are out-of-this-world amazing!
