17 Summer Dinner Ideas When You’re Tired of Grilling and Also Tired of Thinking

Another day, another meal to stress over. Sound about right? I know what you mean — especially with my kids circling me, asking what’s for dinner, and my brain just as equally shutting off at 5:30.

Don't lose this article. Enter your email below, and I'll send it to you right now. Plus a little encouragement and inspiration from me, straight to your inbox.

Before I actually start crying, here are 17 dinners for summer that do not require any thinking, grilling, or crying — so you can prepare them and have dinner just as your kids are starting to cry for real.

Why It Works: No-grill summer dinners aren’t just about avoiding heat. Research on decision fatigue shows that the more choices we make during the day, the worse we get at making new ones by evening. A short, familiar recipe list isn’t laziness. It’s actually how your brain works best after 5 p.m.

1) One-Pan Lemon Garlic Chicken with Green Beans

A cast iron pan holding golden-skinned chicken thighs nestled against bright green beans, with visible caramelized lemon zest and garlic bits, shot on a worn wooden surface.

Prep this one way, and don’t worry about babysitting at all: The oven will do all that work at high heat while you use that time to relax for eight minutes before kids come sliding on the floor asking about the chicken thighs and green beans.

1) One-Pan Lemon Garlic Chicken with Green Beans

Chicken thighs and green beans, one pan, done. No babysitting required. It roasts at high heat, which means the oven does all the work while you sit down for approximately eight minutes before someone needs something.
Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes
Servings: 4 servings

Ingredients

  • 4 bone-in skin-on chicken thighs (about 2 lb)
  • 1 lb green beans trimmed
  • 3 tbsp olive oil
  • 1 lemon zested and juiced
  • 4 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: 1/4 tsp red pepper flakes

Method

  1. Preheat oven to 425°F. Pat chicken dry and season with salt, pepper, and oregano.
  2. Toss green beans with 1 tbsp oil, lemon zest, and a pinch of salt on the pan.
  3. Mix remaining oil, lemon juice, and garlic; brush on chicken.
  4. Arrange chicken skin-side up on beans. Roast 25 to 30 minutes until juices run clear.
  5. If skin isn’t crisp, broil 1 to 2 minutes while watching.
  6. Let rest 5 minutes before serving.

Everything looks amazing. I even made it at 6:10, and somehow, all three kids managed to eat without starting an argument about the green bean portions. That alone earns it a permanent spot in my rotation.

Sheet-Pan Salmon with Cherry Tomatoes and Couscous

A foil-lined sheet pan with two pink salmon fillets surrounded by blistered cherry tomatoes and a mound of fluffy couscous flecked with fresh parsley.

One pan for the salmon and cherry tomatoes, and for the couscous, all you get to do is pour boiling water and pop on the lid — and yes, that’s it.

Sheet-Pan Salmon with Cherry Tomatoes and Couscous

Salmon and cherry tomatoes go on one pan. Couscous gets five minutes of boiling water and a lid. That’s genuinely the whole plan.
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings: 3 servings

Ingredients

  • 1 lb salmon fillets about 2 to 3 pieces
  • 2 cups cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup couscous
  • 1 1/4 cups low-sodium chicken or vegetable broth
  • 1 lemon sliced and zested
  • Handful fresh parsley chopped

Method

  1. Preheat oven to 400°F. Line a sheet pan with foil.
  2. Toss salmon and tomatoes with olive oil, oregano, salt, pepper, and lemon zest. Arrange on pan.
  3. Roast 12 to 15 minutes, until salmon flakes and tomatoes soften.
  4. Meanwhile, bring broth to a boil, stir in couscous, remove from heat, cover 5 minutes, then fluff.
  5. Serve salmon and tomatoes over couscous with a squeeze of lemon and a sprinkle of parsley.

Soccer practice was running late on that day I first made this, and I still had dinner done before 6:00. Nobody noticed the rush, and the tomatoes turned super soft and basically made a fancy sauce around the fish, but that literally took no fancy effort from you.

Cold Sesame Noodles with Shredded Rotisserie Chicken

A wide ceramic bowl filled with pale tan noodles coated in glossy sesame sauce, topped with shredded chicken, thin-sliced cucumber, orange carrot ribbons, and a scatter of toasted sesame seeds.

This is a no oven, no stove needed dish: double the rotisserie chicken, for the creamy sesame sauce, and cold noodles.

Cold Sesame Noodles with Shredded Rotisserie Chicken

No stove. No oven. Just cold noodles, a creamy sesame sauce, and whatever’s left on a rotisserie chicken from the grocery store.

This dish was my savior this past Tuesday, when I had no motivation to cook. The sauce takes about 2 minutes to prepare. The rest is just mixing and throwing everything together. My children even ate it at the counter directly from the bowl I used to mix everything, so that was one less dish to clean.

Tomato-Mozzarella Panzanella with Basil and Leftover Bread

A large shallow bowl of panzanella with rough-torn chunks of golden bread, deep red tomato wedges, torn white mozzarella, and dark green basil leaves glistening with olive oil dressing.

This is the recipe: Old bread, squishy mozzarella, soft tomatoes, and some basil. Preparation is as simple as it sounds. All you have to do is cut the bread into small cubes and add them to a skillet for 4 minutes to toast. From there, everything gets thrown into a bowl.

Tomato-Mozzarella Panzanella with Basil and Leftover Bread

Stale bread, ripe tomatoes, soft mozzarella, basil. That is the whole meal. You toast the bread cubes in a skillet for about four minutes and then everything else just gets tossed together.
Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes
Servings: 4 servings

Ingredients

  • 4 cups cubed leftover crusty bread about 6 slices
  • 3 large ripe tomatoes chopped
  • 8 oz fresh mozzarella torn
  • 1/2 cup fresh basil leaves torn
  • 1/4 red onion thinly sliced
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Method

  1. Toss bread cubes with 1 tbsp olive oil and toast in a skillet 3 to 4 minutes until slightly crisp.
  2. Combine tomatoes, mozzarella, basil, and red onion in a large bowl.
  3. Whisk remaining oil, vinegar, salt, and pepper; pour over salad.
  4. Add toasted bread and toss gently; let sit 10 minutes to soak up juices.
  5. Taste and adjust seasoning before serving.

For panzanella, the trick is to let the mixture rest for 10 minutes. During this time, the bread will soak up all the yummy tomato juices and dressing you added, and it will go from a mix of random ingredients to a delicious meal. Once, I made this at 5:45, and no one knew I hadn’t made anything.

5-Minute Tuna Salad Stuffed Avocados

Two ripe avocado halves with creamy tuna salad mounded into the pit cavities, sitting on a light wood cutting board next to a bright yellow lemon wedge and a small ceramic bowl of extra filling.

Cooking? No thank you. You literally do not have to. All that is required is to open a tin of tuna, mix it with some things you probably grabbed from your refrigerator, and scoop avocado halves with the mixture. That will be done long before your kids stop arguing about screen time.

5-Minute Tuna Salad Stuffed Avocados

Zero cooking. Literally zero. You open a can of tuna, mix it with a few things already in your fridge, and spoon it into avocado halves. Done before the kids finish arguing about screen time.
Prep Time 5 minutes
Total Time 5 minutes
Servings: 2 servings

Ingredients

  • 2 ripe avocados
  • 1 5 oz can tuna in water, drained
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp chopped red onion
  • 1 tbsp chopped celery
  • Salt and pepper to taste
  • Optional: chopped parsley or hot sauce

Method

  1. Halve avocados and remove pits. Scoop a little flesh into a bowl to make room.
  2. Mix tuna, mayo, lemon juice, onion, celery, and reserved avocado flesh. Season with salt and pepper.
  3. Spoon tuna mixture into avocado halves. Top with parsley or a few drops of hot sauce if you like.

This one is the easiest by far. It is nice and light for those warm and sticky nights; it will also fill everyone up so there won’t be kids coming back for extra helpings at 8 PM. That, in my opinion, is a win.

Caprese Grilled Cheese (Pan, Not Grill) with Balsamic Drizzle

A thick sourdough sandwich cut diagonally to show melted mozzarella, a red tomato slice, and dark green basil leaves, with a thin drizzle of dark balsamic glaze across the golden-crusted top, shot on a worn wooden board.

When it comes to the kids, they won’t eat a salad, but they will eat whatever cheese has melted off the plate. The balsamic drizzle does sound fancy, but if you want to impress, it takes literally 4 seconds.

Caprese Grilled Cheese (Pan, Not Grill) with Balsamic Drizzle

This is my move when the kids will refuse anything that looks like a salad but will happily eat melted cheese off a plate. The balsamic drizzle at the end sounds extra, but it takes four seconds and makes it taste like you ordered it somewhere.
Prep Time 5 minutes
Cook Time 8 minutes
Total Time 13 minutes
Servings: 2 servings

Ingredients

  • 4 slices sourdough bread
  • 4 oz fresh mozzarella sliced
  • 1 medium ripe tomato sliced
  • 8 fresh basil leaves
  • 2 tbsp butter softened
  • 1 tbsp olive oil
  • 1 tbsp balsamic glaze
  • Salt and pepper to taste

Method

  1. Butter one side of each bread slice.
  2. Heat oil in a skillet over medium heat.
  3. Layer mozzarella, tomato, basil, salt, and pepper on the unbuttered sides of two slices. Top with remaining slices, buttered side out.
  4. Cook 3 to 4 minutes per side until golden and cheese melts, pressing gently with a spatula.
  5. Slice in half and drizzle balsamic glaze over the top.

The stove only takes 10 minutes to do all this. The kids are quiet while they eat, your house stays cool, and you get 3 wins.

Chickpea and Spinach Curry over Instant Rice

A deep ceramic bowl of golden-orange chickpea and spinach curry ladled over white rice, with dark green wilted spinach visible through the glossy coconut milk sauce, on a wooden table surrounded by scattered dried spices.

All you need is one skillet and twenty minutes of your time. You probably even already have canned chickpeas from the grocery store sitting in the back of your pantry. This recipe is so easy and requires very little effort.

The coconut milk adds a delightful creaminess to the dish without making it too heavy, and the store-bought curry powder takes care of all the seasoning, so you don’t even have to think about it.

Chickpea and Spinach Curry over Instant Rice

One skillet, twenty minutes, and a can of chickpeas you probably already have in the back of the cabinet. The coconut milk makes it creamy without being heavy, and the curry powder does all the flavor work so you don’t have to think about seasoning.
Prep Time 7 minutes
Cook Time 15 minutes
Total Time 22 minutes
Servings: 4 servings

Ingredients

  • 1 tbsp oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tbsp curry powder
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 can 14 oz diced tomatoes
  • 4 cups baby spinach
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • 2 cups instant rice uncooked

Method

  1. Heat oil in a skillet over medium. Sauté onion until soft, about 4 minutes.
  2. Add garlic and curry powder, cook 30 seconds until fragrant.
  3. Stir in chickpeas and tomatoes. Simmer 5 minutes.
  4. Add spinach and coconut milk, cook until spinach wilts, 2 to 3 minutes. Season.
  5. Prepare instant rice per package. Serve curry over rice.

My children ate this without complaints, and I will admit that I did hide the cilantro. I have no regrets.

Smashed Potato and Kale Frittata

A golden-edged frittata in a black cast iron skillet, with visible smashed potato chunks and dark green kale throughout the egg base, with a lightly browned top and a fork resting on the side of the pan.

I think eggs for dinner is a great dinner idea. This frittata is also stove and oven friendly. It’s mostly a hands off dinner after you pour in the eggs. Throw in any cheese you have as well.

Smashed Potato and Kale Frittata

Eggs for dinner is an underrated move and I will stand by that forever. This frittata starts on the stove and finishes in the oven, so it’s mostly hands-off once you pour the egg mixture in. Toss in whatever cheese you have. Nobody’s grading you.
Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes
Servings: 4 servings

Ingredients

  • 1 lb small potatoes halved or smashed
  • 4 cups packed kale stems removed, chopped
  • 8 large eggs
  • 1/3 cup milk
  • 1 cup shredded cheddar or mozzarella
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Method

  1. Boil potatoes until fork-tender, drain, and lightly smash.
  2. Heat oil in an ovenproof skillet, sauté kale until wilted, 3 to 4 minutes.
  3. Add potatoes to skillet, season with salt, pepper, and garlic powder.
  4. Whisk eggs and milk, stir in cheese, then pour over potatoes and kale.
  5. Cook on the stove 3 minutes until edges set, then transfer to a 375°F oven.
  6. Bake 12 to 15 minutes until center is set and top is lightly golden. Let rest 5 minutes.

My kids called this \”egg pizza\” and they started eating it from the pan at 6:05. Love the energy.

Greek Yogurt Tzatziki Bowls with Roasted Veggie Falafel

Two white ceramic bowls each holding a thick layer of pale tzatziki, three golden-brown baked falafel balls, halved cherry tomatoes, dark olives, and a bright green herb garnish, with lemon wedges on the side.

When you have one kid who eats everything and one who only eats beige things as well as a kid who is in an olive phase, build-your-own bowls work best. Everyone assembles their own, and dinners become peaceful.

Greek Yogurt Tzatziki Bowls with Roasted Veggie Falafel

Build-your-own bowls are the move when you have one kid who will eat everything and one who will eat only beige foods and one who is currently in a phase about olives. Everyone assembles their own. Nobody touches anyone else’s food. Dinner is peaceful.

  • 1 tsp dried dill or 1 tbsp fresh, chopped
  • 1 can chickpeas drained and rinsed (15 oz)
  • 1 cup grated zucchini and carrot total

  2. Preheat oven to 425°F. Line a baking sheet with foil.
  3. Blend chickpeas, grated veggies, breadcrumbs, egg, cumin, salt, and pepper until combined.

  5. Assemble bowls: greens, a big spoon of tzatziki, falafel, tomatoes, olives. Serve warm.

While the falafel is baking, it is the perfect time to make tzatziki. It takes under 35 minutes and just feels more impressive than the actual effort you need to put in.

Cold Soba Noodle Bowl with Cucumber, Carrot, and Peanut Sauce

A deep bowl of cold gray-brown soba noodles topped with thin cucumber rounds, orange shredded carrot, sliced green onion, a drizzle of tan peanut sauce, and a sprinkle of black sesame seeds, with chopsticks resting across the rim.

This one also doesn’t need an oven and is, in fact, probably my favorite for super hot nights. Soba noodles take seven minutes to cook, then rinse and mix with everything. The peanut sauce is ready by the time the noodles are done.

Cold Soba Noodle Bowl with Cucumber, Carrot, and Peanut Sauce

Another no-oven situation, and honestly this one might be my personal favorite on a truly hot night. Soba noodles cook in seven minutes, then you rinse them cold and toss everything together. The peanut sauce comes together while the noodles are still boiling.

It was cool and filling and the kids ate it. A win in my books!

Quick Shrimp Scampi with Angel Hair Pasta

A white plate piled with thin angel hair pasta and pink shrimp in a glossy garlic butter sauce, garnished with flat-leaf parsley and lemon slices, with a blurred glass of white wine and fresh herb sprigs visible in the background.

Angel hair pasta cooks in three minutes. Shrimp cook in about four. The garlic butter sauce happens in the same pan. This is the fastest hot dinner on this entire list.

  5. Pour in wine or broth and lemon juice; simmer 1 minute.
  6. Toss pasta with shrimp, add parsley and reserved pasta water to loosen sauce.

BBQ Chicken Quesadillas Using Rotisserie Meat

A white plate stacked with golden-brown quesadilla wedges showing melted orange cheese and dark shredded chicken at the cut edges, with small bowls of red salsa, white sour cream, and chunky guacamole arranged around the plate.

Rotisserie chickens, BBQ sauce and cheese in a tortilla is a great combination.

BBQ Chicken Quesadillas Using Rotisserie Meat

Rotisserie chicken plus BBQ sauce plus cheese plus tortilla. That is a complete sentence and also a complete dinner.
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings: 4 servings

Ingredients

  • 3 cups shredded rotisserie chicken
  • 1/2 cup BBQ sauce
  • 2 cups shredded cheddar or Mexican blend
  • 8 flour tortillas 8-inch
  • 2 tbsp butter or oil for cooking
  • Optional: 1/4 cup sliced green onions salsa, or sour cream for serving

Method

  1. Mix shredded chicken and BBQ sauce in a bowl.
  2. Heat a skillet over medium. Add a little butter or oil.
  3. Place one tortilla in skillet, sprinkle cheese on half, add chicken, then more cheese.
  4. Fold tortilla and cook 2 to 3 minutes per side until golden and cheese melts.
  5. Repeat with remaining tortillas. Slice into wedges and serve with salsa or sour cream.

While the skillet heats, shred the chicken. If you do this quickly, no one will have time to ask for something else. If you want to make this a real meal, you can serve it with salsa and sour cream. I would say both options are valid.

One-Bowl Pesto Pasta with Cherry Tomatoes and Burrata

A wide white pasta bowl with green pesto-coated pasta, halved bright red cherry tomatoes, and a whole burrata ball split open at the center releasing its creamy interior, garnished with a few dark basil leaves.

I’m going to say it again. Store-bought pesto is not cheating.

Combine the cooked pasta with the pesto, halved cherry tomatoes, and a whole burrata on top. At the table, let people tear into it. You only need one pot and one bowl, dinner in twenty minutes. The burrata makes it look like you’ve planned this for a while. You didn’t and that’s ok.

Sweet mango, hearty black beans, and a little lime and cumin mixed with however many tortilla chips you want to add. My kids started eating this while I was still washing the cutting board. That is high praise considering this is the same group that once declared corn “too yellow.”

Sausage and Pepper Skillet with Crusty Bread

A black cast iron skillet with sliced smoked sausage rounds browned at the edges, surrounded by strips of red and yellow bell pepper and soft translucent onion, with a torn hunk of crusty sourdough loaf beside it on the same wooden table.

This is the one that makes the house smell like dinner in the best possible way. The sausage goes into a hot pan, and then the peppers and onions are added to everything while it begins to caramelize.

  5. Whisk hoisin, peanut butter, water, soy sauce, and lime until smooth.
  6. Serve rolls with dip.

A lot of flavor comes from the dipping sauce. In just 2 minutes, you can whip up a quick and easy hoisin, peanut butter, soy sauce, and lime vinaigrette that will take your rolls from blah to WOW.

Sheet-Pan Tofu with Broccoli and Sweet Chili Glaze

A foil-lined sheet pan with evenly spaced golden-edged tofu cubes and dark green broccoli florets coated in a shiny red-orange sweet chili glaze, finished with a scatter of white sesame seeds and thin-sliced green onion.

I made this for the first time, and my kids were convinced we ordered takeout. Those last few minutes of roasting make the sweet chili glaze sticky and caramelized. The tofu has a nice crunch to it, and the edges are nice and crispy, which is key to achieving the right texture.

Sheet-Pan Tofu with Broccoli and Sweet Chili Glaze

I’ll be honest: my kids thought this was takeout the first time I made it. The sweet chili glaze gets sticky and caramelized in the last few minutes of roasting and it looks like something you’d order. The tofu gets crispy edges from the cornstarch, which is the detail that actually makes this work.

  2. Toss tofu with cornstarch, 1 tbsp oil, salt, and pepper. Spread on one side of the pan.
  3. Toss broccoli with remaining oil, salt, and pepper; place on the other side.
