Cold Soba Noodle Bowl with Cucumber, Carrot, and Peanut Sauce

Another no-oven situation, and honestly this one might be my personal favorite on a truly hot night. Soba noodles cook in seven minutes, then you rinse them cold and toss everything together. The peanut sauce comes together while the noodles are still boiling.

Ingredients
  

  • 8 oz soba noodles
  • 1 cup thinly sliced cucumber
  • 1 cup shredded carrot
  • 2 green onions sliced
  • 1/4 cup chopped cilantro optional
  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 to 2 tbsp warm water to thin
  • 1 tsp honey or brown sugar
  • 1 tbsp toasted sesame seeds

Method
 

  1. Cook soba according to package, drain, rinse under cold water.
  2. Whisk peanut butter, soy sauce, rice vinegar, sesame oil, honey, and warm water until smooth.
  3. Toss noodles with cucumber, carrot, green onions, and cilantro.
  4. Pour sauce over noodles and mix until coated.
  5. Sprinkle sesame seeds and serve chilled.
