Vietnamese-Style Rice Paper Rolls with Hoisin-Peanut Dip

These feel interactive in a way that actually works at the dinner table. Set everything out in bowls, pass the rice paper, and let everyone build their own. The kids get to feel like they're in charge of something. You get to stand in the kitchen for approximately zero additional minutes.

Ingredients
  

  • 12 rice paper wrappers
  • 8 oz cooked shrimp halved
  • 1 cup shredded lettuce
  • 1 cup shredded carrots
  • 1/2 cup cucumber julienned
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro
  • 1/3 cup hoisin sauce
  • 1/4 cup creamy peanut butter
  • 2 tbsp warm water
  • 1 tsp soy sauce
  • 1 tsp lime juice

Method
 

  1. Set out all fillings on a clean counter for easy assembly.
  2. Dip one rice paper in warm water 5 to 8 seconds until soft; lay flat.
  3. Place lettuce, carrots, cucumber, herbs, and two shrimp near the bottom edge.
  4. Fold sides in, then roll tightly from the bottom to seal. Repeat.
  5. Whisk hoisin, peanut butter, water, soy sauce, and lime until smooth.
  6. Serve rolls with dip.
