Protein-Packed Cottage Cheese Pancakes
Ingredients
Method
- Add all the wet ingredients into a blender: one cup of cottage cheese, two eggs cracked right in, one tablespoon of almond milk, one tablespoon of maple syrup, and a splash of vanilla. Blend until well combined.
- Combine the dry ingredients in a bowl: half a cup of flour, one tablespoon of baking powder, a quarter teaspoon of cinnamon, and a quarter teaspoon of salt.
- Add the wet ingredients into the dry ingredients and give it a good stir, making sure everything is well combined.
- Heat a skillet over medium to high heat and add a little butter.
- Spoon the batter right into the pan; this will make about four pancakes.
- Flip them when they’re about halfway through cooking and make sure the centers are really well cooked before removing them from the pan.
- Repeat this process until all four pancakes have been cooked, flipping halfway through and making sure they’re really well cooked.
- Add your toppings, such as mixed berries that have been thawed, or try apples and cinnamon or bananas and peanut butter.

Blend the Wet Ingredients
First, we’re going to add all the wet ingredients into a blender. So one cup of cottage cheese, two eggs. Just crack them right in there.

Cook the Pancakes
Now heat a skillet over medium to high heat, add a little butter, and we’re going to spoon the batter right into the pan. So this will make about four pancakes. And you want to flip them when they’re about halfway through cooking and just make sure that the centers are really well cooked before you remove them from the pan.
And now you’re just going to repeat this process until all four pancakes have been cooked, flipping halfway through and just making sure that they’re really well cooked.
Add Your Toppings
And now we’re just going to add our toppings. So I’m using some mixed berries here that were frozen and I have thawed them in the microwave. You could also do something like apples and cinnamon.
That would be really nice, or even bananas and peanut butter, just whatever you like on top.
