Cold Sesame Noodles with Shredded Rotisserie Chicken

No stove. No oven. Just cold noodles, a creamy sesame sauce, and whatever's left on a rotisserie chicken from the grocery store.

Ingredients
  

  • 12 oz spaghetti or ramen noodles cooked and chilled
  • 2 cups shredded rotisserie chicken
  • 1 cup thinly sliced cucumber
  • 1/2 cup shredded carrot
  • 3 tbsp tahini or creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp honey or maple syrup
  • 1 clove garlic minced
  • 1 tsp grated ginger optional
  • 2 tbsp chopped scallions
  • 1 tbsp toasted sesame seeds

Method
 

  1. Cook noodles, rinse under cold water, and drain well.
  2. Whisk tahini, soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger in a bowl.
  3. Toss noodles with sauce until evenly coated.
  4. Add chicken, cucumber, carrot, and scallions; mix gently.
  5. Sprinkle sesame seeds on top and chill 10 minutes before serving.
