Greek Yogurt Tzatziki Bowls with Roasted Veggie Falafel

Build-your-own bowls are the move when you have one kid who will eat everything and one who will eat only beige foods and one who is currently in a phase about olives. Everyone assembles their own. Nobody touches anyone else's food. Dinner is peaceful.

Ingredients
  

  • 2 cups plain Greek yogurt
  • 1 cucumber grated and squeezed dry (about 1 cup)
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • 1 tsp dried dill or 1 tbsp fresh, chopped
  • 1 can chickpeas drained and rinsed (15 oz)
  • 1 cup grated zucchini and carrot total
  • 1/3 cup breadcrumbs
  • 1 egg
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 cups mixed salad greens
  • Cherry tomatoes and olives for topping

Method
 

  1. Make tzatziki: mix yogurt, cucumber, garlic, lemon, dill, and salt. Chill.
  2. Preheat oven to 425°F. Line a baking sheet with foil.
  3. Blend chickpeas, grated veggies, breadcrumbs, egg, cumin, salt, and pepper until combined.
  4. Form into 8 small falafel balls. Toss with olive oil and bake 18 to 20 minutes, turning once.
  5. Assemble bowls: greens, a big spoon of tzatziki, falafel, tomatoes, olives. Serve warm.
