Caprese Grilled Cheese (Pan, Not Grill) with Balsamic Drizzle

This is my move when the kids will refuse anything that looks like a salad but will happily eat melted cheese off a plate. The balsamic drizzle at the end sounds extra, but it takes four seconds and makes it taste like you ordered it somewhere.

Ingredients
  

  • 4 slices sourdough bread
  • 4 oz fresh mozzarella sliced
  • 1 medium ripe tomato sliced
  • 8 fresh basil leaves
  • 2 tbsp butter softened
  • 1 tbsp olive oil
  • 1 tbsp balsamic glaze
  • Salt and pepper to taste

Method
 

  1. Butter one side of each bread slice.
  2. Heat oil in a skillet over medium heat.
  3. Layer mozzarella, tomato, basil, salt, and pepper on the unbuttered sides of two slices. Top with remaining slices, buttered side out.
  4. Cook 3 to 4 minutes per side until golden and cheese melts, pressing gently with a spatula.
  5. Slice in half and drizzle balsamic glaze over the top.
