Method
 

  1. Cook the egg noodles in salted water until tender, then drain.
  2. Melt the butter in a skillet and sear the beef until browned, then remove.
  3. Saute the onion and mushrooms in the same pan until soft, then stir in the flour.
  4. Pour in the beef broth and simmer until slightly thickened.
  5. Lower the heat, stir in the sour cream and beef, warm through, and serve over the noodles.

Notes

Keep the heat low when adding sour cream so the sauce stays smooth.

Lentil Soup

Ingredients
  

  • 1.5 cups brown lentils rinsed
  • 1 onion diced
  • 2 carrots diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp cumin
  • 2 tbsp olive oil

Method
 

  1. Heat the olive oil in a pot and saute the onion, carrots, and garlic until softened.
  2. Stir in the cumin and cook until fragrant.
  3. Add the lentils, diced tomatoes, and broth and bring to a boil.
  4. Reduce the heat and simmer for about 25 minutes until the lentils are tender.
  5. Season to taste and serve warm with a squeeze of lemon if you like.

Notes

A splash of lemon juice at the end brightens the whole pot.
