Chicken Stir-fry

Chicken is tender, and the vegetables are crisp-tender. They are enveloped in soy sauce combined with ginger.

Ingredients
  

  • 1 lb chicken breast cut into strips
  • 2 tbsp vegetable oil
  • 3 cups mixed vegetables sliced
  • 3 tbsp soy sauce
  • 1 tbsp fresh ginger grated
  • 2 cloves garlic minced
  • 1 tbsp cornstarch
  • 1 tbsp honey

Method
 

  1. Whisk the soy sauce, honey, ginger, garlic, and cornstarch with 1/4 cup water to make the sauce.
  2. Heat 1 tablespoon oil in a wok over high and sear the chicken strips until golden and cooked through, then remove.
  3. Add the remaining oil and stir-fry the vegetables until bright and crisp-tender.
  4. Return the chicken to the pan and pour in the sauce.
  5. Toss for a minute until the sauce thickens and clings to everything, then serve over rice.

Notes

Have everything chopped before you start — stir-fry moves fast.
