Ingredients
  

  • 8 oz salami sliced
  • 6 oz prosciutto
  • 8 oz provolone cubed
  • 1 cup marinated artichokes
  • 1 cup mixed olives
  • 1 cup roasted red peppers
  • 1 cup grissini breadsticks

Method
 

  1. Place small bowls of olives and artichokes on the board as anchors.
  2. Fold and fan the salami and prosciutto into ribbons around the bowls.
  3. Cube or wedge the provolone and tuck it into open spaces.
  4. Add the roasted red peppers in a glossy pile.
  5. Fill remaining gaps with grissini so the board looks full.
  6. Serve at room temperature with extra olive oil for dipping.

Notes

Let the cheeses and meats sit out 20 minutes so they're not fridge-cold.

Cannellini Bean Dip

Ingredients
  

  • 2 cans cannellini beans drained
  • 3 tbsp olive oil
  • 2 cloves garlic
  • 1 tbsp lemon juice
  • 1 tsp fresh rosemary chopped
  • salt and pepper to taste

Method
 

  1. Add the drained beans, garlic, lemon juice, and olive oil to a food processor.
  2. Blend until smooth and creamy, scraping down the sides.
  3. Add a splash of water if it's too thick.
  4. Stir in the rosemary and season with salt and pepper.
  5. Spoon into a bowl and swirl the top with a drizzle of olive oil.
  6. Serve with grilled bread or crackers.

Notes

Warm the dip slightly to make it extra silky.

Ingredients
  

  • 8 oz pecorino cheese cut into wedges
  • 3 tbsp honey
  • 1/4 cup walnuts toasted
  • cracked pepper to taste

Method
 

  1. Cut the pecorino into rough wedges and shards.
  2. Arrange the cheese on a serving board.
  3. Scatter the toasted walnuts over and around the cheese.
  4. Drizzle generously with honey.
  5. Finish with a little cracked pepper and serve.

Notes

A drizzle of aged balsamic is a lovely addition too.

  • 3 eggplants sliced
  • 3 cups marinara sauce
  • 2 cups mozzarella cheese shredded
  • 1 cup Parmesan cheese grated
  • 1/4 cup fresh basil
  • 3 tbsp olive oil

Method
 

  1. Preheat the oven to 400 degrees F and roast the eggplant slices in olive oil 20 minutes.
  2. Spread a thin layer of marinara in a baking dish.
  3. Layer eggplant, more sauce, mozzarella, and Parmesan.
  4. Repeat the layers, finishing with cheese on top.
  5. Bake 30 to 35 minutes, until golden and bubbling.
  6. Rest 10 minutes, then scatter with basil and cut into squares.

Notes

Let it rest before cutting so the layers hold their shape.

  • 1 lb calamari cut into rings
  • 1 cup flour
  • 1/2 cup semolina flour
  • 1 tsp salt
  • 2 cups vegetable oil for frying
  • 1 lemon cut into wedges

Method
 

  1. Pat the calamari rings completely dry with paper towels.
  2. Mix the flour, semolina, and salt in a bowl.
  3. Heat the oil to 375 degrees F in a deep pan.
  4. Toss the calamari in the flour mixture and shake off the excess.
  5. Fry in batches 2 to 3 minutes, until pale golden and crisp.
  6. Drain on paper towels and serve immediately with lemon wedges.

Notes

Don't overcrowd the pan or the calamari will turn rubbery.

Method
 

  1. Cook the ravioli for half the package time, then drain and pat dry.
  2. Mix the breadcrumbs with Parmesan in a shallow dish.
  3. Dip each ravioli in beaten egg, then the breadcrumb mixture.
  4. Heat the oil to 350 degrees F in a deep pan.
  5. Fry the ravioli 2 to 3 minutes, until golden and crisp.
  6. Drain on paper towels and serve with warm marinara for dipping.
