Ingredients
  

  • 1.5 lb chicken thighs
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 onion diced
  • 1 can diced tomatoes 14 oz
  • 2 tbsp olive oil
  • 1 tsp oregano

Method
 

  1. Brown the chicken thighs in olive oil, then set aside.
  2. Soften the onion in the same pan.
  3. Stir in the rice, broth, tomatoes and oregano and bring to a simmer.
  4. Nestle the chicken back in, cover, and cook on low 20 minutes until the rice is tender.
  5. Let it rest 5 minutes, then fluff and serve.

Notes

Resist the urge to lift the lid while the rice cooks.

Ingredients
  

  • 1 lb ground chicken
  • 2 tbsp olive oil
  • 1 onion diced
  • 1 can crushed tomatoes 28 oz
  • 1 tsp cumin
  • 1 tsp paprika
  • 4 eggs

Method
 

  1. Brown the ground chicken in olive oil, breaking it up as it cooks.
  2. Add the onion and cook until soft.
  3. Stir in the crushed tomatoes, cumin and paprika and simmer 10 minutes.
  4. Make four wells in the sauce and crack an egg into each.
  5. Cover and cook until the whites are set but the yolks are still runny, then serve with bread.

Notes

Cook the eggs low and slow so the yolks stay jammy.

  • 6 bone-in chicken thighs
  • 1.5 lb baby potatoes halved
  • 3 tbsp olive oil
  • 2 lemons one juiced, one sliced
  • 2 tbsp fresh rosemary chopped
  • 4 cloves garlic minced
  • 1 tsp salt

Method
 

  1. Preheat the oven to 425F.
  2. Toss the potatoes with olive oil, half the rosemary and salt on a sheet pan.
  3. Nestle the chicken thighs among the potatoes and rub with lemon juice, garlic and the rest of the rosemary.
  4. Tuck lemon slices around the pan.
  5. Roast 35 to 40 minutes until the chicken is crisp and the potatoes are tender.

Notes

Give the potatoes a 10-minute head start if you want them extra crispy.

  • 8 bone-in chicken thighs
  • 0.5 cup pitted prunes
  • 0.5 cup green olives
  • 3 tbsp capers
  • 0.25 cup red wine vinegar
  • 0.25 cup olive oil
  • 2 tbsp brown sugar

Method
 

  1. Combine the prunes, olives, capers, vinegar and olive oil, then marinate the chicken in it overnight if you can.
  2. Preheat the oven to 375F.
  3. Arrange the chicken and marinade in a baking dish and sprinkle with brown sugar.
  4. Bake 50 minutes, basting once or twice, until the chicken is golden and cooked through.
  5. Spoon the pan sauce over the top to serve.

Notes

Even a one-hour marinade makes a big difference if you're short on time.
