Lemon Herb Grilled Chicken

Juicy grilled chicken breasts marinated in lemon and herbs, then grilled to smoky and tender perfection.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 3 tbsp olive oil
  • 1 lemon juiced and zested
  • 2 cloves garlic minced
  • 1 tbsp fresh oregano chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Whisk together the olive oil, lemon juice, lemon zest, garlic, oregano, salt and pepper in a bowl.
  2. Add the chicken breasts and turn to coat, then marinate at least 20 minutes (or up to overnight).
  3. Heat a grill or grill pan to medium-high.
  4. Grill the chicken 5 to 6 minutes per side, until charred and cooked through to 165F.
  5. Let it rest 5 minutes before slicing so the juices stay put.

Notes

Pound the breasts to an even thickness first so they cook evenly.
