  • 30 lollipop sticks

Method
 

  1. Mix the crumbled cake with the frosting until it holds together.
  2. Roll into small balls and chill for 30 minutes.
  3. Dip a stick tip in melted coating and insert into each ball.
  4. Dip each pop fully into the melted coating and let the excess drip off.
  5. Add sprinkles before the coating sets and stand upright to dry.

Notes

Chilling the balls firm before dipping keeps them from sliding off the sticks.

Double Chocolate Macarons

Fragile chocolate almond shells encase layers of delicious chocolate ganache.

Ingredients
  

  • 1 cup almond flour
  • 1.5 cups powdered sugar
  • 2 tbsp cocoa powder
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 4 oz chocolate for ganache

Method
 

  1. Sift together the almond flour, powdered sugar, and cocoa.
  2. Whip the egg whites with the granulated sugar to stiff peaks.
  3. Fold the dry mixture into the whites until the batter flows like lava.
  4. Pipe small rounds onto a lined sheet and rest 30 minutes until a skin forms.
  5. Bake at 300F for 16 minutes, then cool completely.
  6. Sandwich pairs with chocolate ganache.

Notes

Let the piped shells form a skin before baking, or they'll crack in the oven.

Creamy Chocolate Panna Cotta

Ingredients
  

  • 2 cups heavy cream
  • 1/2 cup milk
  • 1/3 cup sugar
  • 6 oz dark chocolate chopped
  • 1 packet unflavored gelatin
  • 3 tbsp cold water

Method
 

  1. Sprinkle the gelatin over the cold water and let it bloom for five minutes.
  2. Warm the cream, milk, and sugar in a saucepan until steaming.
  3. Add the chopped chocolate and stir until melted and smooth.
  4. Whisk in the bloomed gelatin until fully dissolved.
  5. Pour into ramekins or glasses and chill at least 4 hours until set.
  6. Top with berries or shaved chocolate to serve.
