Classic Chocolate Yule Log

Soft chocolate sponge cake rolled with airy cream and adorned with frosting to resemble a log from the woods.

Ingredients
  

  • 4 large eggs
  • 3/4 cup sugar
  • 1/2 cup flour
  • 1/4 cup cocoa powder
  • 1 cup heavy cream whipped
  • 6 oz chocolate for frosting

Method
 

  1. Beat the eggs and sugar until pale and thick, then fold in the flour and cocoa.
  2. Spread onto a lined sheet pan and bake at 375F for 12 minutes.
  3. Turn the warm cake onto a towel and roll it up loosely to set its shape.
  4. Once cool, unroll, spread with whipped cream, and roll back up without the towel.
  5. Melt the chocolate with a splash of cream and frost the log, dragging a fork to mimic bark.
  6. Chill for 30 minutes before slicing.

Notes

Rolling the cake while warm is the trick that keeps it from cracking later.
