- Stack frost and keep the pearls in the center so they release when cut.

I created this cake for a backyard gender-reveal party with family and friends. The cake has alternating mousse pockets that reveal the color when you cut into it, which is great for a sunny afternoon.

- 8 oz cream cheese, room temp

- 3 cups vanilla buttercream
- 6-8 drops of gel food coloring (pink or blue)

- 1 cup buttercream frosting, white

- I heated cream and took it off the heat. Then I stirred in chocolate, condensed milk, and glucose, mixing them until everything was smooth.
- I cooled the glaze to 90°F, then poured it over the cake which had also been chilled, and made sure to smooth out any drips.
- I placed the cake in the refrigerator for 30 minutes prior to cutting it in order to keep the center from falling apart.

- Add milk and dry mix, alternately. Be sure to scrape the bowl in between each addition.
- Divide the batter evenly into the prepared pans and bake for 22–25 minutes. To check if the cakes are done, insert a toothpick into the center.
- Cool cakes for 20 minutes, then level the tops. From the middle layer, cut out the center to form a well.
- Fill the well with confetti, stack the layers, and crumb coat with buttercream.

- According to instructions on the box, mix together the cake batters. Instead of water, use milk and make the oil adjustments mentioned above. Split the mixture evenly among the different pans.
- Bake for about 25 to 30 minutes. Let cool completely on wire racks.
- Level the cakes and stack with a thin layer of buttercream in between.
- Create a crescent-shaped cavity and save the crumbs for the edges.
- To dye rock candy crystals, mix a few drops of food gel coloring and a small amount of clear alcohol or light corn syrup with the crystals and then shake to combine. After shaking, allow crystals to dry completely.
- To resemble crystals, pack the cavity with dyed rock candy.

I created this for a backyard party when it was supposed to be 80 degrees Fahrenheit. The bright sorbet center spills out when you cut it. Cold outer layers cover this center.
Ingredients
- 1 quart vanilla ice cream, softened
- 1 pint of chocolate ice cream, softened
- 2 cups pink or blue sorbet, slightly softened
- 1 large mixing bowl (to use as a mold) and some plastic wrap
- Optional: sprinkles or cookie crumbs for rim
Instructions
- Cover a large mixing bowl with plastic wrap, leaving some slack on top.
- Spread half of the vanilla in the bowl to make an even outer shell. Freeze for 20 minutes.
- Pour chocolate on top of the vanilla and freeze for 20 minutes.
- Smooth the top and pack the colored sorbet into the center. Freeze for 30 minutes.
- To seal the sorbet, top with the remaining vanilla. Fold the plastic over it and freeze for at least 4 hours.
- To remove, hold the bowl under some warm water and then cut to show the color.
Prep time is 20 minutes.
