12) Checkerboard cake with surprise colored squares

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsalted butter softened
  • 4 large eggs
  • 1 cup whole milk
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • One teaspoon of pink or blue gel food colorings
  • Cocoa batter: take out 1/2 cup batter + 2 tbsp cocoa powder

Method
 

  1. Set your oven to 350°F (175°C) and prepare three 8-inch cake pans by greasing them.
  2. Cream together the butter and sugar until it is light and fluffy. Gradually add the eggs and the vanilla extract.
  3. Combine the flour, baking powder, and salt. Then, pour in the dry mixture and the milk, alternating as you go.
  4. Set aside 1 cup of batter; then stir in cocoa into one 1/2 cup and color another 1/2 cup.
  5. Using circle cutters, divide each pan into four concentric rings, or use piping to form rings.
  6. For every pan, continue the pattern of layering rings in a checkerboard formation with colors alternating between neutral then colored.
  7. Frost in layers, level, then cool for 10 minutes. Bake for 25 to 30 minutes
  8. Frost on all plain things conceals the colors. Slice to expose the checkerboard.
