I created a colored sponge by baking a little vanilla cake, crumbling it, and mixing it with food coloring until it was even.
I scooped out the center of the chocolate layer and filled the hole with the colored crumbs.
I heated cream and took it off the heat. Then I stirred in chocolate, condensed milk, and glucose, mixing them until everything was smooth.
I cooled the glaze to 90°F, then poured it over the cake which had also been chilled, and made sure to smooth out any drips.
I placed the cake in the refrigerator for 30 minutes prior to cutting it in order to keep the center from falling apart.
