5) Chocolate mirror glaze with a single colored core

Ingredients
  

  • 1 9- inch chocolate cake layer cooled
  • 1 cup heavy cream
  • 6 oz dark chocolate chopped
  • 1/2 cup sweetened condensed milk
  • 2 tbsp glucose or corn syrup
  • Food coloring pink or blue, approximately 1 tsp
  • 1 cup vanilla sponge crumbs colored core
  • 2 tbsp butter

Method
 

  1. I created a colored sponge by baking a little vanilla cake, crumbling it, and mixing it with food coloring until it was even.
  2. I scooped out the center of the chocolate layer and filled the hole with the colored crumbs.
  3. I heated cream and took it off the heat. Then I stirred in chocolate, condensed milk, and glucose, mixing them until everything was smooth.
  4. I cooled the glaze to 90°F, then poured it over the cake which had also been chilled, and made sure to smooth out any drips.
  5. I placed the cake in the refrigerator for 30 minutes prior to cutting it in order to keep the center from falling apart.
