A quick five-minute breakfast where an egg is fried right in a toasted bread hole, served with cottage cheese and guac for extra protein and healthy fat.

Ingredients
  

  • 1 tbsp* olive oil for the pan
  • 1 slice* bread circle cut out of the middle
  • 1 egg
  • 1/8 tsp* salt
  • 1/8 tsp* black pepper
  • 1/4 cup* cottage cheese
  • 2 tbsp* guacamole

Method
 

  1. Get a pan hot with a little olive oil.
  2. Cut circles out of your bread – a wine glass works perfectly.
  3. Toast the bread.
  4. Crack an egg right into the hole.
  5. Season with salt and pepper, and flip.
  6. Plate it up with a scoop of cottage cheese and a side of guac for some healthy fat.
