Ingredients
  

  • 3 lb sweet potatoes cubed
  • 1/3 cup maple syrup
  • 3 tbsp butter melted
  • 1/2 cup pecans chopped
  • 1/2 tsp cinnamon
  • 1/2 tsp salt

Method
 

  1. Heat oven to 400F and toss sweet potato cubes with butter, cinnamon, and salt.
  2. Spread on a sheet pan and roast 25 minutes, stirring once.
  3. Drizzle with maple syrup and scatter the pecans over the top.
  4. Roast 8-10 more minutes until tender and the pecans are toasty.
  5. Pile into a bowl and serve warm.

Notes

Cut the cubes evenly so they roast at the same pace.

Spiced Mulled Wine

A warm, fragrant red wine gently simmered with orange, cinnamon, and other cozy winter spices.

Ingredients
  

  • 1 bottle dry red wine
  • 1/4 cup brandy
  • 3 tbsp honey
  • 1 orange sliced
  • 3 cinnamon sticks
  • 4 whole cloves
  • 3 star anise

Method
 

  1. Combine wine, brandy, honey, and orange slices in a pot.
  2. Add the cinnamon sticks, cloves, and star anise.
  3. Warm gently over low heat for 20-25 minutes without letting it boil.
  4. Taste and add a little more honey if you like it sweeter.
  5. Ladle into mugs, leaving the whole spices behind.

Notes

Keep it on low so the alcohol doesn't cook off completely.
