Brie and Cranberry Pastry Puffs

Puff pastry bites that are flaky and filled with gooey brie paired with a little bit of cranberry sauce.

Ingredients
  

  • 1 sheet puff pastry thawed
  • 6 oz brie cut into cubes
  • 1/2 cup cranberry sauce
  • 1 egg beaten
  • 1 tbsp fresh thyme leaves

Method
 

  1. Heat oven to 400F and grease a mini muffin tin.
  2. Cut the pastry into squares and press one into each cup.
  3. Tuck a cube of brie and a small spoon of cranberry sauce into each.
  4. Brush the edges with egg and bake 16-18 minutes until puffed and golden.
  5. Sprinkle with thyme and let cool a couple minutes before serving.

Notes

These are best warm, so reheat briefly if making ahead.
