  • 2 cups cooked green lentils
  • 3 carrots diced
  • 1 cup frozen peas
  • 1 onion diced
  • 2 cups vegetable broth
  • 2.5 lb potatoes peeled and cubed
  • 3 tbsp butter
  • 2 tbsp tomato paste

Method
 

  1. Boil the potatoes until tender, then mash with butter and a splash of broth.
  2. Saute the onion and carrots until soft, then stir in the tomato paste.
  3. Add the lentils, peas, and broth and simmer until thickened.
  4. Spread the filling into a baking dish and top with the mashed potatoes.
  5. Bake at 400F for 25-30 minutes until the top is golden.
  6. Let it rest a few minutes before scooping into bowls.

Notes

Rough up the mash with a fork so the peaks crisp up.

  • 3/4 cup orange juice
  • 1/4 cup honey

  • 1 tsp cinnamon

  • 3 cloves garlic minced
  • 1 tsp salt

Method
 

  1. Heat oven to 400F, pat the chicken dry, and season inside and out with salt.
  2. Roast on a rack about 50 minutes until the skin begins to brown.
  3. Simmer orange juice, honey, butter, cinnamon, cloves, and garlic into a glaze.
  4. Brush the chicken generously and roast 20-25 more minutes to 165F.
  5. Brush with the last of the glaze and rest 10 minutes.
  6. Carve and serve with orange slices and the pan juices.

  4. Cover and braise 2 hours, then add the carrots, parsnips, potatoes, and onion.
  5. Braise 1 more hour until the beef and vegetables are fork-tender.
  6. Slice the beef and serve in shallow bowls with the vegetables and gravy.
