Prime Rib with Garlic Herb Butter

An amazing prime rib roast encrusted with garlic herb butter and roasted to a perfect medium-rare.

Ingredients
  

  • 5 lb bone-in prime rib
  • 1/2 cup butter softened
  • 5 cloves garlic minced
  • 2 tbsp fresh rosemary chopped
  • 2 tbsp fresh thyme chopped
  • 1.5 tsp salt
  • 1 tsp black pepper

Method
 

  1. Let the roast sit at room temperature 1 hour, then heat oven to 450F.
  2. Mash butter with garlic, rosemary, thyme, salt, and pepper and rub all over the roast.
  3. Sear at 450F for 15 minutes, then drop the heat to 325F.
  4. Roast about 1.5 hours more until a thermometer reads 130F for medium-rare.
  5. Rest the prime rib at least 20 minutes under foil.
  6. Slice between the bones and serve with any rendered juices.

A meat thermometer is your best friend for a perfect center.
