Mexican Cauliflower Rice

Mexican-style zesty riced cauliflower cooked with tomatoes, spices, and lime.

Ingredients
  

  • 4 cups riced cauliflower
  • 1 cup diced tomatoes
  • 1 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tbsp cilantro chopped

Method
 

  1. Heat the olive oil in a skillet over medium heat.
  2. Stir in the cumin and chili powder and toast for 30 seconds.
  3. Add the riced cauliflower, tomatoes, and tomato paste.
  4. Cook 10 to 12 minutes, stirring, until the cauliflower is tender and the liquid reduces.
  5. Finish with lime juice and cilantro and serve.

Notes

Top with a spoonful of salsa or a sprinkle of cotija for extra flavor.
