Cauliflower Fried Rice

Riced cauliflower stir-fried with egg and peas, and seasoned with soy sauce makes for a ready in a flash weeknight skillet meal!

Ingredients
  

  • 4 cups riced cauliflower
  • 2 large eggs beaten
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 3 cloves garlic minced
  • 1/2 cup frozen peas and carrots
  • 3 stalks green onion sliced

Method
 

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Push the garlic and peas and carrots into the pan and cook for 2 minutes.
  3. Scoot everything to one side, pour in the beaten eggs, and scramble until set.
  4. Add the riced cauliflower and soy sauce, stirring constantly for 5 to 6 minutes until tender.
  5. Fold in the green onions and serve hot.

Notes

Press the riced cauliflower in a towel first so it crisps instead of steaming.
