Prep the Meat and Veggies
This is a super simple jambalaya to make at home, and it starts with a rotisserie chicken that you’re going to shred and then set aside. You’ll then put olive oil in a pan and chop up some sausage. I went with andouille sausage here because we really like the flavour for this meal, but you can do any sausage of your choice.

Let that saute and then chop up some veggies. I went with green bell pepper and some white onion. Put more olive oil in a separate pan, then sauté that as well. You’re going to want to cook your veggies until they become fragrant, at which point you will be adding your shredded rotisserie chicken to your sausage. Stir that up and let it simmer really nicely.

Add the Jambalaya Mix
Next, grab a box of jambalaya mix. I like this Zatarain’s. It’s really simple. Follow the instructions on the box. It’s two cups of water with the mix. Get that in there, and then you’re dumping everything in- your meat and veggies. Cover that up and let this simmer for 20 minutes.
Season and Serve
In the last five minutes, we’re going to add some seasoning. So I like to just add in some salt, some fresh ground pepper, and some garlic powder. And of course, you need Tony Chachere’s Creole seasoning. Go ahead and stir that up nicely. Put the lid back on and let it finish simmering.
It’s now time to serve this up. Put a couple of scoops in the bowl, and this one is good to go.
