This is a recipe I cooked up one day when I was very much in need of going to the grocery store.

I had an extra package of cream cheese left over from a dessert I had made, and thought it would be good to try a creamy pasta. I looked around to see what else I had, and found egg noodles, garlic, and tomatoes. The result ended up being pretty tasty, and it’s easy to make. I hope you enjoy it!

If you are dairy sensitive this will be a lot for you. I would switch to a Neufchâtel or vegan cream cheese, in this instance. This takes me about 40 minutes to cook. It could take more or less time depending on if you prep your ingredients beforehand. This makes 4 adult-sized servings. It would be pretty easy to adjust the recipe to make more or less as needed. In this case you may need larger saucepans.

Ingredients

3 1/2 Cupsof Egg Noodles
1 8-ounce packageof cream cheese
4Roma tomatoes or other tomato of your liking
5 clovesof garlic
Pinchof Salt
Pinchof Pepper
Pinchof basil or parsley (optional)

How To Make It

  • 1. In a two-quart saucepan, bring 4 cups of water to a boil.
  • 2. While waiting for the water to boil, I slice the tomatoes and garlic. This can also be done prior to starting.
  • 3. When the water is boiling, add 3 1/2 cups of egg noodles.
  • 4. Once the noodles are cooked (tender), strain out the water, and set the noodles off to the side.
  • 5. In a one-quart saucepan, add your chopped garlic and tomatoes and bring to medium heat. Stir the tomatoes and garlic occasionally for a duration of 2-3 minutes.
  • 6. Fold in and chop your 8-ounce package of cream cheese.
  • 7. Keep stirring. Add a pinch of salt and a pinch of pepper.
  • 8. Make sure to mix well. Once well mixed, turn the heat down to a simmer, and pour your cream cheese mixture over the noodles into your two-quart saucepan.
  • 9. Mix well. Voila!
  • 10. Top with parsley or basil (optional)

Helpful Tips

To cut down on cooking time, cut your tomatoes and garlic beforehand.

To add protein to this recipe, you could add a cooked meat of your choice. I occasionally like to add chicken or salmon.

This pairs well with a fresh salad or cooked veggies. I would personally recommend a spinach salad with cranberries and walnuts or cooked asparagus.

To make the cleanup process go smoothly, immediately after pouring the cream cheese mixture over the noodles in step 8, soak your one-quart saucepan in a little water so the cream cheese doesn’t dry and stick to the pan. This way, when you come back to it, it should wipe right off with a sponge, towel or whatever you use to clean your dishes.
