Air Frying The Chicken

First, you’re going to cut up some chicken breasts into bite-sized pieces and spread those evenly on the bottom of your air fryer. I always like to use a liner to make cleanup easier.

And then you will mix those with some vegetable oil and I seasoned with a chicken Mrs. Dash, black pepper, and a sea salt and pepper seasoning blend. But you can play around with seasonings as you see fit.

You will air fry those at 400 degrees for 15 minutes, flipping halfway through.

Preparing The Rice And Veggies

I then prepared some instant rice according to the package instructions, and I had a steamable bag of peas and carrots that you can pop in the microwave.

While your veggies are cooking and your chicken is finishing up, you’re going to scramble some eggs. I went with six eggs here for a family of five, and then when those are done, you will scoot your eggs to the side and start to mix everything together.

Mixing It All Together

Pour your steamed veggies into one corner of the pan, your rice in the other corner, and then mix that together. You will then add soy sauce.

Soy sauce does have a high sodium content even if you go with a low sodium brand like I had here, so taste it as you go and then add your chicken.

You will stir it all together, and this meal is good to go.
