Total Time 30 minutes
Servings: 5 servings

Ingredients

  • 1.5 lbs* chicken breasts cut into bite-sized pieces
  • 1 tablespoon* vegetable oil
  • 1 teaspoon* chicken Mrs. Dash seasoning
  • 1/2 teaspoon* black pepper
  • 1 teaspoon* 5 salt and pepper seasoning blend
  • 2 cups* instant rice prepared according to package instructions
  • 1 bag* steamable peas and carrots microwaved
  • 6 eggs scrambled
  • 2 tablespoons* soy sauce low sodium recommended, taste as you go

Method

  1. Cut up chicken breasts into bite-sized pieces and spread evenly on the bottom of your air fryer, using a liner for easier cleanup.
  2. Mix the chicken with vegetable oil and season with chicken Mrs. Dash, black pepper, and a 5 salt and pepper seasoning blend (or seasonings of your choice).
  3. Air fry the chicken at 400 degrees for 15 minutes, flipping halfway through.
  4. While the chicken cooks, prepare instant rice according to package instructions and microwave a steamable bag of peas and carrots.
  5. Scramble six eggs and, once done, scoot them to the side of the pan.
  6. Pour the steamed veggies into one corner of the pan and the rice into the other corner, then mix everything together.
  7. Add soy sauce, tasting as you go since it's high in sodium even in low sodium brands.
  8. Add the cooked chicken and stir it all together.
