Cooking the Shrimp

Let’s make some high-protein shrimp and pesto quesadillas. First, we’re going to heat up a little olive oil in a pan. And now we’re going to add about four ounces of shrimp. Salt the shrimp and then stir them while they’re cooking for about two minutes, until they’re cooked through. And then just turn off the heat and move them over to the side.

Pesto Shrimp Quesadillas

Quick high-protein quesadillas made with sautéed shrimp, pesto, and mozzarella folded into a protein tortilla.

  1. Heat up a little olive oil in a pan.
  2. Add about four ounces of shrimp, salt them, and stir while cooking about two minutes until they’re cooked through, then turn off the heat and move them to the side.
  3. Take a high protein tortilla and spread one and a half slices of mozzarella cheese and one tablespoon of pesto out evenly over it.
  4. Add the shrimp on top – the first quesadilla is done.
  5. Repeat to make a second quesadilla, increasing the shrimp quantity if you’d like more.
  6. Add hot sauce or chili flakes if you like things spicy.
  7. Slice them up and enjoy.

Assembling the Quesadillas

I’m using high-protein tortillas for this recipe, and we’re just going to add one and a half slices of mozzarella cheese and one tablespoon of pesto. Spread it out evenly, add the shrimp, and the first quesadilla is done. Then we’ll get started on the second quesadilla.

You can make as many as you’d like, and I would just increase the quantity of the shrimp. You can also add hot sauce to this or some chili flakes if you like things spicy.

Now would you believe that just one of these quesadillas has 36 grams of protein so it’s a super high protein meal and now you just slice them up and enjoy!
