Ingredients
  

  • 2 medium* sweet potatoes chopped
  • 1 cup* brussels sprouts chopped
  • 1 cup* rainbow carrots chopped
  • 2 tablespoons* olive oil
  • 1/2 teaspoon* salt
  • 1/4 teaspoon* pepper
  • 2 cloves* garlic
  • 4 fillets* flounder
  • 2 tablespoons* plant butter or regular butter
  • 1 lemon* fresh lemon juice juiced

Method
 

  1. Start by chopping sweet potatoes, brussel sprouts, and rainbow carrots.
  2. Toss them with olive oil, salt, pepper, and garlic.
  3. Roast everything at 350 for about 20 to 25 minutes, flipping halfway through.
  4. While that’s going, season your flounder with salt, pepper, a little bit of plant butter or regular butter, and fresh lemon juice.
  5. Serve the roasted veggies with the seasoned flounder.
