Here’s an easy salmon dinner that takes minimal prep and gives you protein, carbs, and veggies all in one meal. I started with the asparagus, trimmed the ends, and added a little plant butter with lemon pepper seasoning.

Lemon pepper is probably my favorite seasoning for asparagus. It makes it so good, and they are loaded with nutrients and fiber.

Next up we have the potatoes. I kept these really simple with salt, pepper, garlic, onion powder, and rosemary. I used a little bit of olive oil and gave everything a good toss so they’re evenly coated before roasting.

Add The Salmon
And for the protein, I used pre-seasoned salmon to make it easier. Great when you’re in a pinch and don’t have a lot of time to meal prep.
Roasting And Swaps
You could swap in:
- chicken or shrimp
- sweet potatoes or rice
- and any veggie you love
Roast in the oven for about 25 minutes at 375. Easy, balanced, and perfect for a busy weeknight.
