No-Bake Pumpkin Protein Balls

Easy no-bake pumpkin protein balls made with almond flour, protein powder, and almond butter for a chewy, satisfying fall snack.

  1. Mix together the almond flour, vanilla protein powder, pumpkin pie spice, cinnamon, and a little salt.
  2. Add the pumpkin puree and almond butter to the dry mix.
  3. Add the maple syrup and vanilla, then mix everything together until you have a thick dough.
  4. Pop the dough in the fridge for about 20 to 30 minutes to firm up.
  5. Once firm, roll the mixture into bite-sized balls.
  6. Roll the balls in a little coconut sugar for an extra sweet finish.
  7. Freeze the balls for about 30 minutes, then they’re ready to enjoy.

  • Three tablespoons of maple syrup
  • A teaspoon of vanilla
  • Coconut sugar, for rolling

How to Make Them

This gives them that soft doughy texture while adding some healthy fats to make them more satisfying.

Add three tablespoons of maple syrup and a teaspoon of vanilla, and mix everything together until you have a thick dough, then pop it in the fridge for about 20 to 30 minutes.

Once it firms up, roll the mixture into bite-sized balls. I like to roll mine in a little coconut sugar for an extra sweet finish.
