Protein-Packed Cottage Cheese Pancakes

A quick blender pancake recipe using cottage cheese for a high-protein breakfast, topped with your favorite fruit.

Ingredients
  

  • 1 cup cottage cheese
  • 2 eggs cracked in
  • 1 tablespoon almond milk
  • 1 tablespoon maple syrup
  • 1/2 teaspoon* vanilla a splash
  • 1/2 cup flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon* butter for the skillet
  • 1/2 cup* mixed berries frozen, thawed

Method
 

  1. Add all the wet ingredients into a blender: one cup of cottage cheese, two eggs cracked right in, one tablespoon of almond milk, one tablespoon of maple syrup, and a splash of vanilla. Blend until well combined.
  2. Combine the dry ingredients in a bowl: half a cup of flour, one tablespoon of baking powder, a quarter teaspoon of cinnamon, and a quarter teaspoon of salt.
  3. Add the wet ingredients into the dry ingredients and give it a good stir, making sure everything is well combined.
  4. Heat a skillet over medium to high heat and add a little butter.
  5. Spoon the batter right into the pan; this will make about four pancakes.
  6. Flip them when they’re about halfway through cooking and make sure the centers are really well cooked before removing them from the pan.
  7. Repeat this process until all four pancakes have been cooked, flipping halfway through and making sure they’re really well cooked.
  8. Add your toppings, such as mixed berries that have been thawed, or try apples and cinnamon or bananas and peanut butter.

These are really simple to make with minimal ingredients, and they’re a great high-protein breakfast option.

Blend the Wet Ingredients

First, we’re going to add all the wet ingredients into a blender. So one cup of cottage cheese, two eggs. Just crack them right in there.

One tablespoon of milk. I’m using almond milk, one tablespoon of maple syrup, and a splash of vanilla. And we’re just going to blend that up until it’s well combined.

Mix the Dry Ingredients

Next, we’re going to combine the dry ingredients:

  • A half cup of flour
  • One tablespoon of baking powder
  • A quarter teaspoon of cinnamon
  • And a quarter teaspoon of salt

Cook the Pancakes

Now heat a skillet over medium to high heat, add a little butter, and we’re going to spoon the batter right into the pan. So this will make about four pancakes. And you want to flip them when they’re about halfway through cooking and just make sure that the centers are really well cooked before you remove them from the pan.

Add Your Toppings

And now we’re just going to add our toppings. So I’m using some mixed berries here that were frozen and I have thawed them in the microwave. You could also do something like apples and cinnamon.
