A fall-flavored chia pudding loaded with pumpkin, hemp hearts, and yogurt that keeps you full and comes together in just 10 minutes of prep.

Ingredients
  

  • 1/3 cup chia seeds
  • 2 tablespoons hemp hearts
  • 3/4 to 1 cup milk any kind
  • 1/2 cup vanilla yogurt
  • 3/4 cup pumpkin puree
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon vanilla
  • 2 tablespoons maple syrup for sweetening
  • 1 tablespoon* maple syrup for topping
  • 1/8 teaspoon* cinnamon for sprinkling on top

Method
 

  1. Start with a third cup of chia seeds packed with fiber, plus two tablespoons of hemp hearts for extra protein and healthy fats.
  2. Pour in 3/4 to 1 cup of any milk you like.
  3. Add half a cup of vanilla yogurt to make it extra creamy and add even more protein.
  4. Add three quarters cup of pumpkin puree, real pumpkin loaded with vitamin A.
  5. Add two teaspoons of pumpkin pie spice, half a teaspoon of vanilla, and two tablespoons of maple syrup to sweeten it naturally.
  6. Mix until smooth.
  7. Let it sit 10 minutes, stir again, and then chill at least four hours.
  8. For the toppings, drizzle with maple syrup, then sprinkle with a little bit of cinnamon.

Chill and Serve

Mix until smooth. Let it sit for 10 minutes, stir again, and then chill at least four hours. For the toppings, you could use maple syrup with it. Then I poured that over the pudding and sprinkled it with a little bit of cinnamon. Save this one for fall.
