Cooking the Shrimp
Let’s make some high-protein shrimp and pesto quesadillas. First, we’re going to heat up a little olive oil in a pan. And now we’re going to add about four ounces of shrimp. Salt the shrimp and then stir them while they’re cooking for about two minutes, until they’re cooked through. And then just turn off the heat and move them over to the side.

Assembling the Quesadillas
I’m using high-protein tortillas for this recipe, and we’re just going to add one and a half slices of mozzarella cheese and one tablespoon of pesto. Spread it out evenly, add the shrimp, and the first quesadilla is done. Then we’ll get started on the second quesadilla.
